 onionsBRAISED ONION PASTA SAUCE

½ cup of butter.
1 ½ lb of yellow onions, sliced 3/8\" thick.
1 tablespoon of sugar.
¼ cup of Madeira.
Pasta, cooked.
Grated Parmesan cheese.

In a skillet, melt the butter, then add the sliced onions, and cook, covered, over medium heat until soft and transparent.

Uncover, then stir in the sugar, reduce the heat, and cook gently until brown (about 1 hour).



Stir in the Madeira and cook for 2 minutes.

Toss the sauce with drained, cooked pasta.

Serve at once with grated Parmesan cheese.
